Five favorite fish

"Fish, not fishes?" a Thai student tries to clear up his confusion. "I know..." I wink while going through plural rules with them, "wait until the 'last leaf clings to the bough. It will get really tough.'"

I love fish. It's a staple part of my diet whether at home or when dining out. But I don't know many of their names and when that is the case I identify them according to where or when I ate them. These are five of my favorite fish:

Kinilaw or raw tuna chunks soaked in coconut vinegar, salt and refined sugar; and mixed with purple onion, ginger, chili and cucumber. This was during one of those summer vacations in the Philippines. Kinilaw is a native Filipino fish dish.

Lapu-lapu escabeche or sweet and sour lapu-lapu. These are ginger, carrot and bell pepper strips. I can't find the pineapples but I think there were. The son must have eaten them already when I took this photo.

Skipjack stew - cooked with vinegar, soy sauce, garlic, onion, and black pepper in low heat for at least half an hour.

Deep sea fried is, according to a girl friend, "bejeweled with shredded green mango, carrot, basil and cashew nuts." Day 1 dinner, oceanfront balcony of Saffron on the Sea, Elephant Island.

  1. I like a lot of different fish too, but my Hubby doesn't.
    So, I usually order it when we go out to eat...that way we are both happy!

  6. Yummy! I love asian food. I used to cook Indonesian food, but now I am alone and spend not much time to cook a meal for myself, even if I eat a warm meal every day.

  10. I love fish, but either battered (typically British!) or without any frills, only vinegar and salt. Sometimes I do it in the microwave (low number) and covered loosely, sprinkled with seasoned salt and butter. Fresh tuna steaks are great like this.

Dyslexics and Developmental Pediatricians

Let me begin with an observation on the latter.  Developmental pediatricians in the Philippines are a rare breed. Or that's what I noticed. From society and organization websites, to forums, to word-of-mouth, to my own experience, they seem to be outnumbered by people who need their expertise. A parent of a child with developmental delays has to wait weeks or months to see one developmental pediatrician. Only thirty are listed on the Philippine Society of Developmental and Behavioral Pediatrics. Twenty-five in one Filipino autism blog, and that is not purely DevPeds. A child psychologist, child psychiatrist, and pediatric neurologist are mixed in the list, although they certainly are a big help too. At my son's speech therapy and psychology center I hear the same account from other parents - securing a time slot with a DevPed is hard. They are all fully booked throughout what could turn into a year. You may be lucky if someone withdraws but that rarely happens. I'm playing
